Warm Ayurvedic Apple-Pecan Medley

Embrace the cozy flavors of fall with this warm Ayurvedic apple and dates recipe!

Combining sweet apples, earthy dates, and buttery pecans with warming spices like cinnamon, cardamom, and ginger, this dish nourishes body and soul.

Cooked in ghee, which is revered in Ayurveda for its grounding and digestive qualities, this simple treat balances Vata energy, especially during the cooler months.

Enjoy it as a satisfying breakfast, a mid-day snack, or a light dessert that embodies the best of seasonal, Ayurvedic eating.

Ingredients:

  • 1 medium apple

  • 3-4 dates

  • 1/4 cup raw pecans

  • 1 tsp ghee

  • ½ tsp cinnamon

  • ¼ tsp cardamom

  • ¼ tsp ginger

Instructions

  1. Chop up the apple into bite-size pieces. 

  2. Add the chopped apple with the ghee, cinnamon, cardamom and ginger.

  3. Cook on medium heat for 2-3 minutes.

  4. In the meantime, roughly chop the dates (removing the pits, if applicable) and the pecans.

  5. Add to the pan and cook on medium heat for another 5 minutes until the apples soften. 

  6. Serve and savor the fall flavors!
